One of the most delightful baked treats are scones. They are super quick and easy to make and so light and fluffy. My recipe uses lemonade and cream – it’s the bubbly lemonade that makes the scones so light and fluffy. I love mine with jam and cream but sometimes they are perfect on their own. What you need
2 cups) self-raising flour
¼ cup caster sugar
½ teaspoon salt
1/2 cup thickend cream
1/2 cup lemonade (shhhh – this is the secret ingredient)
Milk for brushing the tops of your scones to give them that golden colour
How to
Preheat your oven to 180 degrees (fan forced). These scones only take around 10 -15 minutes in the oven so the burst of heat from a fan forced oven is essential. Line your baking tray with baking paper.
Place the flour, sugar and salt in a large bowl. Add the cream and lemonade and mix using a bread knife to form a soft dough. Do not over mix or your scones will not be light and fluffy. You really just need to ensure your ingredients are combined.
Turn out onto a lightly floured workbench and knead lightly until combined. Again – it is really important not to over mix.
Press the dough with your hands to a thickness of about 2cm. Use a round cutter to cut out around 8 scones. Place on baking tray and brush the tops with some milk. Bake for 10-15 minutes until lightly browned.
Serve warm with your favourite treats.
