Happy baking xxx I love a cookie with my coffee! I have been testing these cookies for a while now. After a few tweaks, I think I have created the perfect cookie! They taste amazing, are vegan and do not use refined sugars. Happy baking xxx BACK. TO. SCHOOL! I am always looking for quick and easy recipe snacks for myself and for my boys to pop into our lunch boxes or after school treats at home. These chocolate protein balls fit the bill! Give them a try! Ingredients for 12 balls 1/2 cup of quick oats (blended until they are very fine like breadcrumbs) 1 tablespoon cacoa 2 tablespoons natural sweetener like rice malt syrup, honey or agave syrup 3 tablespoons smooth peanut butter (or a nut alternative if taking these to school) 1 scoop of your favourite protein powder (optional) 1-2 tablespoons of coconut for coating What to do Blend all the ingredients in a blender and then roll into balls and coat with coconut. If the mixture is a little dry then add 1 tablespoon at a time of water or your favourite dairy free milk (such as soy milk, almond milk, rice milk etc). Store in an air tight container in the fridge or 3-5 days. Enjoy! Over Christmas I made a 'few' pavlovas.
