Tim Tam truffles coated in white chocolate.... ummmm.. yes please! Keep reading folks! They are super easy and taste AH-mazing!
You will need a food processor for this recipe. Grab a packet of Tim Tams and 80g of cream cheese and blend in the food processor until it all comes together into a ball. This can take a few minutes.
Grab a handful (I measure 19-20g) and roll into a ball. If you use this size you should get 12-13 Tim Tam truffle pops.
Grab a lollipop stick (Wilton make them; you can grab them from cake decorating or party supply shops) and poke a hole in the centre of each ball. Refrigerate for around an hour.
Melt a packet of white chocolate buttons. If it looks a little bit thick you can add some copha to make it smooth and glossy and not so 'gluggy'. You can also use the Wilton melts (you can grab them from cake decorating or party supply shops) or you can use some food colouring and colour the white chocolate to suit your party theme.
Dip the end of your lollipop stick into the white chocolate and then into the balls. Try to keep the sticks as straight as possible. Refrigerate until the chocolate is set. This ensures your chocolate balls don't fall off the stick when you complete the next and final stage!
Make sure your chocolate is still super smooth and then dip the balls into the white chocolate and cover them. Allow them to set and you are on your way to Tim Tam heaven! Enjoy
